The War of the Ring: The History of The Lord of the Rings, Part Three by J.R.R. Tolkien and Christopher Tolkien

This covers the second half of Two Towers and the first half of Return. Less fumbling about for inspiration than the opening -- but some, with the future Orthanc stone first being just shattered when it hits the ground, or Faramir's name and relationship to Boromir -- and a lot of work with time tables. (This is what happens when you split up the party and four separate courses of events have to interweave.)

The Encyclopedia of Fantasy by John Clute and John Grant

A 1999 encyclopedia with an extensive overview of fantasy.  Not only movies, authors, and magazines, but also themes.  From FOREST and EDIFICE to THINNING.

The thematic entries have a lot of interesting stuff.  Though, since they do have a concept of fantasy, works that do not match their template may be discussed with the sound of an ax grinding.  (Also some ax grinding on personal topics.)

Beren and Lúthien by J.R.R. Tolkien and Christopher Tolkien

For people who want to understand what happened to the tale in its various revisions before it reached the form that Christopher Tolkien put in the Silmarillion and which gets alluded in The Lord of the Rings.

I find it interesting to watch his concept of Middle-Earth shift with world-building.

The Art of Time in Fiction: As Long as It Takes by Joan Silber

A look at various uses of time, passage of time, structure of time, speed and slowness, flashbacks (a correction:  flashbacks are a technique to reveal backstory, they are not the same thing), the effect of death on a story.  Literary in examples.

Reading Lolita in Tehran by Azar Nafisi

A memoir about living in the Islamic Republic, and reading English literature.  Mostly in a small, private class consisting of a handful of young women coming to the home of the author, after she had given up her post at the university.

Also hitting on the Iraq-Iran War, the requirements for veils, protests, executions, and more.

Style is the Rocket: and Other Essays on Writing by Tom Simon

Essays. I read them online (and commented there, too, the Mary Catelli cited in one is indeed me), and now in dead tree form. Plus a new essay exclusively for the books.

Most of the examples are drawn from fantasy, but may be of more general interest. The title essay discusses what, exactly, is the significance of style in fiction. And the others touch on ways to write, inspiring effects of other fiction, taking apart Heinlein's Rules, and more.

Aspects of the Novel by E.M. Forster

An interesting look at some aspects of fiction.

The difference between just telling events and having cause and effect. The use of flat characters. Fantasy, which just brushes on the edge of the genre as we know it.

Some parts I didn't like -- like his unexplained contempt for pure story. And the writer may find it a bit abstract.
